Vinification and ageing

Whole Nebbiolo clusters are gently pressed with a short maceration of 5-6 hours. The must ferments in temperature-controlled steel tanks.
As is usual with classic method spumante, the wine is bottled with a liqueur de tirage to induce the second fermentation. In total, the wine remains on its lees for about 30-36 months.
